Ingredients:

  • 250g ground beef
  • 250g ground pork
  • 250g ground lamb (optional, can be substituted with more beef or pork)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 cup sparkling water (for fluffiness)
  • Vegetable oil for grilling

Instructions:

  1. Prepare the Meat Mixture: In a large bowl, combine the ground meats. Add the finely chopped onion, minced garlic, salt, black pepper, paprika, and cayenne pepper (if using). Mix everything thoroughly until the ingredients are well incorporated.

  2. Add Sparkling Water: Gradually add the sparkling water to the meat mixture, mixing continuously. This step helps to keep the pljeskavica light and tender.

  3. Shape the Patties: Divide the meat mixture into portions (depending on how large you want the pljeskavica to be). Shape each portion into a flat, round patty, about 1/2 inch thick. You can make the patties as large or small as you prefer.

  4. Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, lightly grease it with vegetable oil and heat over medium-high heat.

  5. Grill the Pljeskavica: Place the patties on the grill and cook for about 5-7 minutes on each side, or until they are well-browned and cooked through. The internal temperature should reach 70°C (160°F). Turn them once during cooking to ensure even grilling.

  6. Serve: Serve the pljeskavica hot, either on a plate with sides like roasted potatoes and salad or inside a somun with accompaniments like onions, ajvar, and kajmak.
