Podvarak Roasted sauerkraut with pieces of pork or chicken, often baked until golden

Podvarak is a traditional Serbian dish made with sauerkraut (fermented cabbage) and meat, often pork or poultry, such as chicken or duck. This hearty and flavorful dish is typically baked in the oven until the cabbage is caramelized and the meat is tender. Ingredients:

  • 1 kg sauerkraut (fermented cabbage), drained and chopped
  • 500g pork (or chicken/duck), cut into pieces
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons lard or vegetable oil
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 cup water or broth
  • Salt to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).

  2. Sauté the Onions and Garlic: In a large oven-safe pot or Dutch oven, heat the lard or vegetable oil over medium heat. Add the chopped onions and sauté until they become soft and translucent, about 5 minutes. Add the minced garlic and sauté for another 2 minutes.

  3. Add the Sauerkraut: Stir in the chopped sauerkraut, paprika, black pepper, and caraway seeds (if using). Mix everything well to combine the flavors.

  4. Add the Meat: Place the pieces of pork (or chicken/duck) on top of the sauerkraut mixture. Pour in the water or broth to keep the dish moist while baking.

  5. Bake the Podvarak: Cover the pot with a lid or aluminum foil and bake in the preheated oven for about 1.5 to 2 hours. Check occasionally, adding more water or broth if the dish looks too dry. Remove the lid for the last 30 minutes of baking to allow the cabbage to caramelize slightly.

  6. Serve: Serve the podvarak hot, accompanied by mashed potatoes, bread, or another side of your choice.
