Ingredients:

Instructions:

  1. Prepare the Zucchini: Wash and slice the zucchinis into rounds or sticks, about 1/4 inch thick.

  2. Set Up the Breading Station: Place the flour in a shallow dish. In another shallow dish, beat the eggs. In a third shallow dish, combine the breadcrumbs, grated Parmesan cheese, oregano, garlic powder, paprika, salt, and pepper.

  3. Coat the Zucchini: Dip each zucchini slice into the flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess egg to drip off. Finally, coat it in the breadcrumb mixture, pressing lightly to ensure an even coating.

  4. Heat the Oil: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. To test if the oil is ready, drop a small piece of breadcrumb into the oil; if it sizzles and floats to the surface, the oil is hot enough.

  5. Fry the Zucchini: Fry the coated zucchini slices in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.

  6. Serve: Garnish with fresh parsley if desired and serve warm. Pohovane Tikvice are delicious on their own or with a side of yogurt or sour cream for dipping.
