  • 2 tablespoons olive oil

  • 3 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 cup green peas (fresh or frozen)
  • 1 cup chicken stock or water
  • 1/2 cup white wine (optional)
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Ingredients: Cut the chicken into chunks if needed. Peel and chop the vegetables.
  2. Sauté Aromatics: Heat the olive oil in a large, heavy-bottomed pan (or “disco”) over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Cook Vegetables: Add the bell peppers and tomatoes to the pan. Stir and cook for about 5 minutes.
  4. Add Chicken: Add the chicken pieces to the pan and cook until browned on all sides.
  5. Add Liquids and Seasonings: Pour in the chicken stock (or water) and white wine (if using). Add paprika, oregano, cumin, salt, and black pepper. Stir to combine.
  6. Simmer: Reduce heat to low and let the stew simmer for about 30 minutes, or until the chicken is cooked through and tender.
  7. Add Potatoes and Carrots: Add the potatoes and carrots to the pan. Continue to simmer for an additional 20 minutes, or until the vegetables are tender.
  8. Add Peas: Stir in the green peas and cook for a final 5 minutes.
