Provoleta is a popular Argentine appetizer made from a thick slice of provolone cheese that is grilled until it achieves a crispy golden crust on the outside while remaining gooey and melted on the inside. It is often seasoned with oregano and red chili flakes and can be drizzled with olive oil for extra flavor. This dish is traditionally served as a starter in Argentine asados (barbecues), making it a savory treat perfect for cheese lovers.

Ingredients:

  • 1 thick slice of provolone cheese (about 1 inch thick)
  • 1 tsp dried oregano
  • ½ tsp red chili flakes (optional)
  • 1 tbsp olive oil
  • Freshly ground black pepper to taste

Instructions:

  1. Preheat the grill or a cast-iron skillet over medium-high heat.

  2. Prepare the cheese: Pat the slice of provolone cheese dry with a paper towel to remove any excess moisture.

  3. Season the cheese: Sprinkle the cheese with oregano, red chili flakes (if using), and black pepper.

  4. Grill the cheese: Place the provolone slice on the hot grill or skillet. Grill for about 2-3 minutes on each side until the outside is golden and crispy, and the inside starts to melt.

  5. Drizzle with olive oil: Once the cheese is done grilling, transfer it to a plate and drizzle with olive oil.

  6. Serve immediately: Enjoy the Provoleta while it’s hot, alongside crusty bread or on its own.
