Ingredients:

Instructions:

  1. Marinate the Meat:

    • In a bowl, combine yogurt, ginger-garlic paste, Kashmiri red chili powder, turmeric powder, and salt. Add the meat chunks and coat them thoroughly. Cover and refrigerate for at least 1 hour or overnight.
  2. Prepare the Curry:

    • Heat oil or ghee in a large pot over medium heat. Add cumin seeds, cinnamon stick, cloves, and bay leaf. Sauté for a minute until fragrant.
    • Add the sliced onions and cook until golden brown. Add minced garlic and ginger, and cook for another minute.
    • Stir in the pureed tomatoes and cook for about 5-7 minutes, or until the oil starts to separate from the tomato mixture.
    • Add coriander powder, fennel seeds, garam masala, black pepper, and cardamom powder. Mix well.

    • Pour in the water or beef broth, stir well, and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 1-1.5 hours, or until the meat is tender and the sauce has thickened. Stir occasionally.

    • Adjust seasoning with salt if needed. Garnish with fresh coriander leaves before serving.
