Seviyan (Vermicelli) Kheer - A sweet pudding made from roasted vermicelli, milk, sugar, and flavored with cardamom
Seviyan Kheer, also known as vermicelli kheer, is a popular Indian dessert made from roasted vermicelli cooked in milk and sweetened with sugar. It’s flavored with cardamom and garnished with nuts and dried fruits, making it a rich and creamy dessert perfect for festive occasions or as a sweet treat after meals.
Ingredients:
- 1/2 cup vermicelli (seviyan)
- 4 cups milk
- 1/4 cup sugar (adjust to taste)
- 2 tablespoons ghee (clarified butter)
- 1/4 teaspoon cardamom powder
- 10-12 cashews
- 10-12 almonds (sliced)
- 10-12 raisins
- 2 tablespoons chopped pistachios (optional)
- 1/4 teaspoon saffron strands (optional)
- 1/2 teaspoon rose water (optional)
Instructions:
Roast the Vermicelli:
- Heat 1 tablespoon of ghee in a pan over medium heat.
- Add the vermicelli and roast until it turns golden brown, stirring continuously to prevent burning. Set aside.
Prepare the Nuts and Raisins:
- In the same pan, add another tablespoon of ghee.
- Fry the cashews, almonds, and raisins until the nuts are golden brown and the raisins puff up. Set aside.
Cook the Vermicelli:
- In a separate heavy-bottomed pot, bring the milk to a boil.
- Once the milk starts boiling, reduce the heat to low and add the roasted vermicelli.
- Stir well and cook on low heat until the vermicelli softens and the milk thickens slightly. This should take about 10-15 minutes.
Add Sugar and Flavoring:
- Add the sugar to the kheer and stir until it dissolves completely.
- Add the cardamom powder, saffron strands (if using), and rose water (if using).
- Cook for another 5 minutes, stirring occasionally.
Garnish and Serve:
- Add the fried nuts and raisins to the kheer.
- Stir well and cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped pistachios if desired.
- Serve warm or chilled.
