Sopa Criolla A traditional soup made with beef broth, bell peppers, onions, and garlic. Sometimes finished with a fried egg on top, this dish has Spanish influences and is often enjoyed as a warming, simple meal across Argentina
Sopa Criolla is a traditional Peruvian soup known for its comforting and flavorful combination of ground beef, noodles, and a rich, spicy broth. It’s often enjoyed as a hearty meal, especially during cooler weather. The soup is mildly spiced with ají panca, a Peruvian red chili pepper, which adds a warm, earthy depth to the dish without overwhelming heat.
Ingredients:
- 200 gr ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ají panca paste (or substitute with mild chili paste)
- 2 tablespoons olive oil
- 1 liter beef or chicken stock
- 100 gr angel hair pasta (or thin noodles)
- 2 medium potatoes, peeled and diced
- 1 large egg
- 1/2 cup evaporated milk
- Salt and black pepper to taste
- Fresh parsley or cilantro, chopped (for garnish)
- Lime wedges (optional, for serving)
Instructions:
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant.
- Cook the Beef: Add the ground beef to the pot and cook until browned, breaking it up into small pieces as it cooks.
- Add Spice: Stir in the ají panca paste (or chili paste) and cook for another 2 minutes to allow the flavors to meld.
- Add Potatoes and Stock: Add the diced potatoes and stock to the pot. Bring to a boil, then reduce the heat to a simmer. Cook for about 15 minutes or until the potatoes are tender.
- Cook the Noodles: Add the angel hair pasta to the soup and cook for an additional 5 minutes, or until the noodles are soft.
- Add the Egg and Milk: Crack the egg directly into the soup and stir to break it up into ribbons. Slowly stir in the evaporated milk and season with salt and black pepper to taste.
- Serve: Ladle the soup into bowls, garnish with chopped parsley or cilantro, and serve with lime wedges on the side.
