Ingredients:

  • 200 gr ground beef
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ají panca paste (or substitute with mild chili paste)
  • 2 tablespoons olive oil
  • 1 liter beef or chicken stock
  • 100 gr angel hair pasta (or thin noodles)
  • 2 medium potatoes, peeled and diced
  • 1 large egg
  • 1/2 cup evaporated milk
  • Salt and black pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)
  • Lime wedges (optional, for serving)

Instructions:

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant.
  2. Cook the Beef: Add the ground beef to the pot and cook until browned, breaking it up into small pieces as it cooks.
  3. Add Spice: Stir in the ají panca paste (or chili paste) and cook for another 2 minutes to allow the flavors to meld.
  4. Add Potatoes and Stock: Add the diced potatoes and stock to the pot. Bring to a boil, then reduce the heat to a simmer. Cook for about 15 minutes or until the potatoes are tender.
  5. Cook the Noodles: Add the angel hair pasta to the soup and cook for an additional 5 minutes, or until the noodles are soft.
  6. Add the Egg and Milk: Crack the egg directly into the soup and stir to break it up into ribbons. Slowly stir in the evaporated milk and season with salt and black pepper to taste.
  7. Serve: Ladle the soup into bowls, garnish with chopped parsley or cilantro, and serve with lime wedges on the side.
