Stracciatella An Italian egg drop soup made by slowly drizzling beaten eggs into a hot broth, often with Parmesan cheese and spinach

Stracciatella is a traditional Italian egg drop soup, particularly popular in the Lazio region. The name “Stracciatella” comes from the Italian word “stracciato,” which means “torn” or “ripped,” referring to the appearance of the small shreds or “rags” of egg that form when beaten eggs are slowly drizzled into the hot broth. This simple yet nourishing soup is often served as a first course and is especially popular around Easter. It’s typically made with just a few ingredients: eggs, broth, Parmesan cheese, and sometimes spinach, making it a quick and easy dish that’s both light and flavorful.

How to Make Stracciatella

Ingredients:

  • 4 cups (1 liter) chicken broth or vegetable broth
  • 3 large eggs
  • ¼ cup (30g) grated Parmesan cheese
  • 1-2 cups fresh spinach, chopped (optional)
  • Salt and pepper to taste
  • Nutmeg (optional, a pinch for flavor)
  • Lemon zest (optional, for garnish)

Instructions:

  1. Heat the Broth:

    • In a medium pot, bring the chicken or vegetable broth to a simmer over medium heat.
  2. Prepare the Egg Mixture:

    • In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. If you’re using nutmeg, add a pinch to the egg mixture.
  3. Cook the Spinach (Optional):

    • If using spinach, add the chopped spinach to the simmering broth and cook for 1-2 minutes until wilted.
  4. Create the Egg Ribbons:

    • Reduce the heat to low, and slowly drizzle the egg mixture into the simmering broth while stirring constantly in a circular motion. The eggs will cook immediately and form thin ribbons or “strands” in the soup.
  5. Season and Serve:

    • Taste the soup and season with salt and pepper to your liking. Serve the Stracciatella hot, optionally garnished with a bit of lemon zest for a fresh touch.
