How to Make Struffoli

Ingredients:

  • 2 1/2 cups (300g) all-purpose flour
  • 3 large eggs
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon anise liqueur (optional)
  • Zest of 1 lemon
  • Zest of 1 orange
  • A pinch of salt
  • Vegetable oil, for frying

For the Honey Syrup:

  • 1 cup (340g) honey
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

For Decoration:

  • Multicolored sprinkles
  • Candied fruit (optional)

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the flour, sugar, and a pinch of salt.
    • Make a well in the center, and add the eggs, butter, anise liqueur (if using), lemon zest, and orange zest.
    • Mix the ingredients together until a dough forms. Knead the dough on a lightly floured surface until smooth and elastic, about 5 minutes.
    • Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  2. Form the Struffoli:

    • Divide the dough into small portions and roll each portion into long, thin ropes about 1/2 inch in diameter.
    • Cut the ropes into small, bite-sized pieces (about 1/2 inch each). Roll each piece into a small ball.
    • Place the dough balls on a lightly floured surface to prevent sticking.
  3. Fry the Struffoli:

    • Heat about 2 inches of vegetable oil in a large, deep skillet or pot to 350°F (175°C).
    • Fry the dough balls in batches until they are golden brown and puffed, about 2-3 minutes per batch.
    • Remove with a slotted spoon and drain on paper towels.
  4. Prepare the Honey Syrup:

    • In a large saucepan, combine the honey, sugar, lemon juice, and vanilla extract.
    • Heat the mixture over medium heat until the sugar dissolves and the syrup is smooth, about 5 minutes.
    • Remove the syrup from the heat.
  5. Combine and Decorate:

    • Place the fried dough balls in a large bowl. Pour the warm honey syrup over them, tossing to coat evenly.
    • Arrange the Struffoli on a serving platter in a mound or wreath shape.
    • Sprinkle with multicolored sprinkles and garnish with candied fruit if desired.
  6. Serve:

    • Let the Struffoli cool slightly before serving. They are best enjoyed fresh but can be stored at room temperature for a few days.
