Svadbarski Kupus, or “Wedding Cabbage,” is a traditional Serbian dish often served at weddings and large gatherings. This hearty stew is made from layers of cabbage and meat, typically pork and sometimes beef or lamb, slow-cooked in a clay pot for several hours. Ingredients:

  • 1 large head of cabbage, shredded
  • 2 lbs (900g) pork (preferably a mix of fatty and lean cuts like pork shoulder, ribs, and smoked bacon)
  • 1 lb (450g) beef or lamb (optional)
  • 3-4 cloves of garlic, minced
  • 1-2 onions, chopped
  • 1 tablespoon sweet paprika
  • 1 teaspoon hot paprika or chili flakes (optional)
  • 1-2 bay leaves
  • 1 teaspoon caraway seeds (optional)
  • Salt and pepper to taste
  • 1/4 cup (60ml) vegetable oil or lard
  • 2-3 cups (500-750ml) water or beef broth
  • 1 tablespoon tomato paste (optional)
  • Smoked meat or sausage (optional, for extra flavor)

Instructions:

  1. Prepare the Meat:

    • Cut the pork and any other meat you’re using into large chunks. Season with salt, pepper, and paprika.
  2. Layer the Ingredients:

    • In a large clay pot or a Dutch oven, add a layer of shredded cabbage.
    • Add a layer of meat, followed by some of the minced garlic, chopped onions, and a sprinkle of paprika.
    • Repeat the layers until all the ingredients are used, finishing with a layer of cabbage on top.
  3. Add Seasoning:

    • Add the bay leaves, caraway seeds (if using), and any additional spices or smoked meats.
    • Drizzle the oil or lard over the top.
    • If using, dissolve the tomato paste in the water or beef broth and pour it over the cabbage and meat.
  4. Cook the Stew:

    • Cover the pot with a lid and place it in a preheated oven at 300°F (150°C).
    • Cook the Svadbarski Kupus slowly for 4-6 hours, or until the meat is tender and the flavors are well combined. You can stir the dish occasionally to ensure even cooking.
  5. Serve:

    • Remove the pot from the oven and let it rest for a few minutes before serving.
    • Serve the Svadbarski Kupus hot, accompanied by fresh bread or potatoes.
