  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup white wine or chicken broth
  • Fresh rosemary for garnish (optional)

Instructions:

  1. Prepare the Marinade: In a small bowl, combine minced garlic, paprika, oregano, thyme, olive oil, salt, and black pepper. Mix well to form a paste.

  2. Marinate the Pork: Rub the pork shoulder or belly with the marinade mixture, ensuring that it is evenly coated. Cover and refrigerate for at least 2 hours or overnight for best results.

  3. Preheat the Oven: Preheat your oven to 180°C (350°F).

  4. Roast the Pork: Place the marinated pork in a roasting pan. Pour the white wine or chicken broth into the pan to create some moisture. Cover the pan with aluminum foil.

  5. Cook the Pork: Roast in the preheated oven for about 2 to 2.5 hours, or until the pork is tender and the internal temperature reaches 75°C (165°F). Remove the foil during the last 30 minutes of cooking to allow the pork to brown and crisp up.

  6. Rest and Serve: Let the pork rest for 10-15 minutes before slicing. Garnish with fresh rosemary if desired. Serve hot with your choice of side dishes.
