Ingredients:

For the Crust:

  • 250 grams all-purpose flour
  • 125 grams unsalted butter, cold and cubed
  • 50 grams powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Apple Filling:

  • 4 medium apples (Granny Smith or another tart variety), peeled, cored, and thinly sliced
  • 50 grams granulated sugar
  • 1 teaspoon cinnamon
  • Juice of 1 lemon

For the Glaze:

  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions:

  1. Prepare the Crust:

    • In a large bowl, mix the flour, powdered sugar, and salt. Add the cold butter cubes and rub them into the flour mixture using your fingers or a pastry cutter until it resembles coarse crumbs.
    • Add the egg and vanilla extract, mixing until the dough starts to come together. If necessary, add a tablespoon of cold water to help bind the dough.
    • Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  2. Prepare the Apple Filling:

    • In a bowl, toss the thinly sliced apples with sugar, cinnamon, and lemon juice. Set aside while you roll out the dough.
  3. Assemble the Tart:

    • Preheat the oven to 180°C (350°F).
    • Roll out the chilled dough on a lightly floured surface into a circle large enough to cover your tart pan (about 23 cm in diameter). Gently transfer the dough into the tart pan, pressing it into the bottom and up the sides. Trim any excess dough.
    • Arrange the apple slices in a circular pattern on top of the dough, overlapping them slightly for a decorative effect.
  4. Bake the Tart:

    • Bake in the preheated oven for 35-40 minutes, or until the apples are tender and the crust is golden brown.
  5. Prepare the Glaze:

    • While the tart is baking, heat the apricot jam and water in a small saucepan over low heat until smooth.
    • Once the tart is out of the oven, brush the apples with the warm apricot glaze to give them a shiny finish.
  6. Serve:

    • Allow the tart to cool slightly before slicing. Serve warm or at room temperature, optionally with a scoop of ice cream or a dollop of whipped cream.
