How to Make Torta Caprese

Ingredients:

  • 1 1/2 cups (200g) dark chocolate, finely chopped
  • 1 cup (200g) unsalted butter, cubed
  • 1 cup (200g) granulated sugar
  • 1 1/2 cups (150g) almond flour
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional)
  • A pinch of salt
  • Powdered sugar for dusting

Instructions:

  1. Prepare the Chocolate Mixture:

    • Preheat your oven to 350°F (175°C).
    • Grease and line a 9-inch springform pan with parchment paper.
    • Melt the dark chocolate and butter together in a heatproof bowl over simmering water (double boiler method). Stir until smooth, then remove from heat and let it cool slightly.
  2. Prepare the Batter:

    • In a large bowl, beat the egg yolks with the granulated sugar until pale and creamy.
    • Add the melted chocolate mixture, almond flour, vanilla extract, orange zest (if using), and salt to the egg yolk mixture. Mix until well combined.
    • In a separate bowl, whisk the egg whites until they form stiff peaks.
    • Gently fold the egg whites into the chocolate mixture, being careful not to deflate them.
  3. Bake the Cake:

    • Pour the batter into the prepared springform pan and smooth the top with a spatula.
    • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
    • Let the cake cool completely in the pan before removing it.
  4. Serve:

    • Dust the cooled cake with powdered sugar before serving. Torta Caprese can be served with a dollop of whipped cream or a scoop of vanilla gelato for an extra treat.
